Successful – in my book – outcome of what to do with the mystery cheese Torta Extremeda. It’s from this recipe from good ol’ beeb, with amendments – strawberries not blueberries, lemon zest not vanilla, T.E. not soured cream. Strangely it doesn’t taste at all of cheese, which considering how very – pungent – T.E. is, is amazing. NB It’s no longer in the shop so must be a seasonal delicacy.
First cake actually baked in some 20 years? It all comes back including need to improvise.
